Most EA games use dedicated servers on PSN and XBL. Both services use a mix of dedicated and peer-to-peer. Only the PSN seems to offer more dedicated server hosted games.

I don't think you realize how fast 30 frames per second is. There are 100 milliseconds in a second. That means that each 3.3 millisecond a frame is calculated. A response time of 3.3 milliseconds can't be considered laggy.
